Pork and Apple Stew

I am a big believer in eating foods in season, the produce usually tastes better, cheaper, fresher and with higher nutritional value. And now is finally autumn🍂 That means…..its apple season!

Apart from eating an apple on its own or making an apple dessert, they are actually just as good in a savory dish. Apple and pork is a great classic combination, so I thought I would share this 30 min stew recipe with you so we can all enjoy this autumn goodness.

p.s. the sweetness of the apple and onion makes this dish so irresistible! 😍

Ingredients

  • 400g Pork Shoulder Steak
  • 3 x Apple x 3
  • 2 x Red Onion x2
  • 1x x Carrot
  • 300g Potatoes
  • 2 x Chicken stock cube
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 tsp Cider Vinegar
  • 2 tbsp Olive Oil
  • 800 ml Water

Instructions

1. Marinade Pork with Salt, Pepper & Cider Vinegar. Oil a deep cooking pan with 2 tbsp of oil. Cook the pork steak for 3 mins each side. Remove them from the pan.
2. Use the same pan, add diced Onion, Apple, Carrots, and Potatoes. Cook them for 5 mins. 🍎
3. Add 800ml water to deglaze the pan, along with the chicken stock cubes. Add the pork back to the pan. Let it cook over high heat for 15 mins or until most water is absorbed (with the lid on!) 💧💧
4. Ta-da! Ready to serve! 💁🏻‍
